Karn, Silver Golem and Undying/Persist Interaction

Let's say I have a Karn, Silver Golem and Mikaeus, the Unhallowed on the field at the same time along with any noncreature artifact (say Gilded Lotus for this example).
If someone uses a destroy effect on the Gilded Lotus will Undying return it to the field if I animate it with Karn in response to the removal?
As I understand it, it won't come back as a creature because it has no memory of its former self. In that case does the +1/+1 counter remain on it even though it isn't a creature? Can non-creature permanents have +1/+1 or -1/-1 counters?

Yes.
If someone Naturalizes Gilded Lotus, and you animate it with Karn, Silver Golem, then it will have Undying thanks to Mikaeus, the Unhallowed. Thus, it will be destroyed and Undying will trigger, returning Gilded Lotus to the battlefield with a +1/+1 counter on it. You are also correct in assuming that it will return as an artifact, and not a creature.
Noncreature permanents can have various counters on them, but it's not very common. Usually it's an effect on the permanent itself like Raging Ravine or Llanowar Reborn.
